Vía Romana is made through a traditional process that captures the essence of the land where it grows. After a completely manual harvest, the grapes are de-stemmed and unloaded by gravity into the fermentation tanks. There, the alcoholic fermentation takes place at a controlled temperature of between 24 and 26°C, after which the malolactic fermentation takes place. The wine remains for a minimum of eight months in stainless steel tanks at a controlled temperature and another minimum of six months in the bottle before going on the market.
